
Together Germano Minin and Joe Chelednik, pizza master, Bruno DiFabio will open Romolo Gastro Pizza, a Roman-style pizza restaurant on Monday, July 10.
It’s widely known that renowned chef Bruno DiFabio is a pizza master. This native of Italy and former judge on The Food Network’s Chopped, has been teaching chefs around the world the art of pizza making for over 10 years, focusing on pizza technique, the scientific principles of dough making, theory, and the history of pizza.
Now, home is where DiFabio's heart is. Ridgefield is about to get a slice of heaven.
Tucked under Interiors & Designs by Ursula, access to Romolo Gastro Pizza is behind Main Street, a feature that DiFabio says enhances the authentically Italian dining experience “It’s like a speakeasy, an underground club,” says DiFabio.
An intimate forty seat restaurant, Romolo Gastro Pizza will be true to it’s name, “Gastro means high-end gourmet,” says DiFabio. But, he adds, “We are high-end at low prices”. Menu items will not exceed $20.
DiFabio says both he and Germano will share the chef hat. “It’s a collaboration between chef Germano and me. I am doing the pizza menu as I am the pizza champ,” he says. Handmade pastas, mother dough from Italy, and pizza baked on a steel plate in a extremely hot electric oven, are just some of the reasons DiFabio calls Romolo Gastro Pizza “super Italian”.
