3 questions with Bob Sperry, co-owner of Ridgefield Prime.

Why did you start your business?

My partner Ed Bistany and I love a great steak. Not a supermarket steak like most of us grew up on (Mom, London Broil again?) We are talking about a thick, hand trimmed, well marbled, USDA Prime Steak. Ed loves a bone-in RibEye. My favorite is a Prime Dry Aged Porterhouse Steak.  You couldn’t get a steak or, for that matter, fresh wild catch fish in Ridgefield. So our passion for quality food led us to open Ridgefield Prime ten years ago.

Have a bigger store with an open cooking area to do demonstrations and lessons. Chef Chris Nass is an excellent teacher and most of our friendly butchers love to cook. Maybe someday.

How many people do you employ?

 We have a dozen food enthusiasts working at Ridgefield Prime. Half are hard working RHS student/athletes. Our friendly butchers know most of our customers on a first name basis. People love talking food and most can put up with some of our bad jokes.
